Becoming a Master of Cebu’s Lechon (roast pig)

Immensely crispy skin, succulent, juicy and flavoursome meat – what happens when you roast a large whole pig on a spit over charcoal for hours. Arguably Cebu, Philippines’ national dish, the world came to know about lechon when the late Anthony Bourdain dubbed it the “Best pig, ever!”

This Filipino, Christian came to Singapore to fulfil his “Singaporean dream” as a salesman in a bank, but eventually became a lechonero (pig roaster) of his restaurant Iskina Cebu at Timbre Plus.
