US chefs, start-ups create alternative to shark’s fin

Environmentalists have been fiercely fighting against shark’s fin on restaurant tables. As the shark population declines, some US chefs and tech start-ups are offering a new alternative to the delicacy. At the Michelin three-star restaurant Benu in San Francisco, chefs have created a gel that resembles shark’s fin.
